Summer-yum Fruity, Fresh Salad

As the summer sun reaches its peak, there's no better way to celebrate the season's bounty than with a refreshing and colorful salad filled with the best fruit summer has to offer, plus cucumber for crunch. 

From the sweet burst of strawberries and blueberries to the crisp coolness of cucumber and the unexpected twist of fresh basil, this salad is a perfect balance of flavors. Drizzled with a zesty lime and honey dressing, it's not just a side dish—it's a celebration of summer on a plate.

Ingredients

Zest of 1 lime
1 tablespoon lime juice
1 tablespoon extra virgin olive oil
2 teaspoons honey
⅛ teaspoon salt
1 cup hulled & quartered strawberries
1 cup blueberries
1 cup pitted sweet red cherries
1 1/2 cups cubed watermelon
1 cup cucumber slices
2 chopped nectarines
About 5 fresh basil leaves

Instructions

  1. In a small bowl, whisk together the lime zest, lime juice, olive oil, honey, and salt. Set aside.

  2. In a large bowl, toss together the strawberries, blueberries, cherries, watermelon, cucumber, and nectarines. Use your hands to tear the basil leaves into small pieces and add to the fruit. 

  3. Pour the dressing over the fruit just before serving and toss to combine. 

Notes

This salad is best when dressed just before serving and eaten the day it's made. However, any leftovers can be stored covered in the refrigerator. The fruit will give off moisture and become softer in texture as it sits.
